And now for something… completely different.
We like to select White Label coffees that are either an exquisite example of a typical cup profile of a growing region, or ones that present something unique and often unexpected. This month’s offering falls firmly in the latter category.
The coffee’s full name is Honey Castillo + (Wine Yeast / Peaches), though after your first sip the only word you will be likely be to remember from all that will be peaches!
Honey Castillo + was grown by Jairo Arcila on his farm in Santa Monica in the Quindio region of Colombia where he has been cultivating coffee for almost 40 years. This micro-lot is comprised of 100% Castillo cultivar—a variety developed by the Colombian National Federation of Coffee Growers for resistance to leaf rust—and fermented in a dry anaerobic environment with wine yeast and peaches for 3 days. The skin and fruit are then removed through pulping, leaving mucilage on the seeds (the “honey process”) to dry on raised beds with peaches interspersed throughout.
The cup brings big and pleasant aromas of fresh peaches and peach nectar. Supplemental flavors of coconut milk and pineapple-like effervescence add dimension to the cup like a peachy pina colada with a coating milky mouthfeel, medium body, and sparkly tropical acidity. The coffee’s structure is impressive throughout, presenting its flavors immediately and holding them well through the finish.
This is clearly a coffee where a creative and exacting fermentation process is responsible for producing such an amazing cup. The resulting fruit notes come off big and sweet without an overly ripe sensation sometimes found in experimental processing. You won’t find typical nuanced coffee flavors here, but if the reaction of those who have cupped this with us so far is any indication, you will likely be impressed with the bold tropical and stone fruit flavors offered in spades.
