While the exact origins and identity of St Valentine are unknown, today his name inspires thoughts of the language of the heart. Whether honoring existing relationships or toasting the thrills of new romance, we like to share the celebration with the language of coffee.
We landed on two micro-lots from different regions of El Salvador to form the foundation of this year’s blend—the anaerobically fermented Finca Espana from Ahuachapán we’ve had the pleasure of roasting once before as a White Label, and the natural processed Finca La Esperanza from Quezaltepeque.
The aromatically dense and fruit-forward Espana is tempered by the silky, floral, and mildly tart effervescence of the Esperanza which opens broadly across the palate carrying combined flavors of pomegranate, rose pedal, strawberry cream and hints of cola. The dominant aromatics from the two El Salvador coffees are supported on a base of medium-bodied high-grown washed Papua New Guinea coffee from the Kenta plantation in the Waghi Valley, contributing subtle pistachio-like nuttiness and milk chocolate notes of its own resulting in a quite smooth and open cup.
